wow....the threads today are just full of fun filled arguement fuel....hahahahahahaha

IMHO any state can make great BBQ its american as baseball.....but its way better south of the mason/dixon line....

Carolinas for the pork butts/shoulders....cant beat it....
Missouri/kansas for pork ribs....
texas for the brisket

Then you get into the sauces.....wholy shat now there is no winning there lol....

I am a BBQ FANATIC. In fact I am competing this weekend.
BBQ was INVENTED in the SOUTH! But......it has been PERFECTED IN THE MIDWEST!!!

Southern BBQ = not enough season, not enough smoke, too much vinegar.
A lot of it tastes like it was thrown into a crock-pot with salt and pepper with liquid smoke added. Other words.... BLAND

That being said....I don't REALLY think you can narrow it down to a State. If I HAD to, I would say MY BBQ is the best and since I live in Kansas, Kansas has the best! LOL

I have had EXCEPTIONAL BBQ in:
Kansas
Arkansas
Texas
Oklahoma
Missouri
South Carolina
New York (yes really....un friggin beleivable, but Syracuse New York has an outstanding BBQ joint) http://www.dinosaurbarbque.com/locations/syracuse/

I am a bbq judge if anyone has the coals goin'

3 things I hate that people do when they are bbq'ing.

1. liquid smoke......really??!?!?!?! good smoke on anything beats the liquid stuff every time
2. too much bbq sauce....let that meat flavor roll.....its to enhance it not hide it....
3. its not bbq'ing if the temp is over 275 degrees....then it becomes grilling....get it right people!!! LOL

Anywhere from 150 to 225ish is what I smoke at. Depends on what part of the smoking process I am at. If its pork: APPLE, Beef: Hickory, Foul: Apple or Hickory, Fish: Alder. Grapevine is good as peach is too. Hate Cherry or Mesquite to smoke with

The BARK is key...and you have to have sugar in yur rub and mop to make a great bark. MOST (not all) Southern BBQ'rs don't quite get that.

oh yea....I do like the sweet side of bbq but there is always a place in my heart for a spicy dry rub on a brisket......

Oh yea with the wood its like matching a jig up with a good trailer....oak & pecan for brisket, apple with pulled pork, apple/hickory with pork ribs, apple/cherry with poultry.

mmmmm....oh and mesquite for beef and deer....

There is a place in Cincinnati, Ohio that probably has the best ribs I've ever tried. I think they actually do the as a dry rub then cook them with the sauce. You can order them online and they will ship them to you. It was Montgomery Inn ribs. If we have some people on here from Ohio they can probably give some more info. I've tried ribs from several places and haven't found any better ones.

Spicy and sweet in the rub and the mop. Let the smoke do the rest...

Looks like I won't be competeing....my partner just backed out!

Wherever it's smoked is fine with me, ribs, roast, flanks, especially thick steaks. I don't care as long as there's enough to go around 2 or 3 times with some potato salad, beans, coleslaw, fresh rolls, banana pudding & ice tea ... YUM

I've even put rattle snake on the smoker & it was damn good.

Put 2 hen turkey's on the smoker last weekend & had neighbors standing in line with their tongues wagging until everbody got a belly full.

BIG difference between Grilling and BBQ! Although, I do make "BBQ" chicken on the grill. Smoked chicken...way different.

I tend to think BBQ = SMOKED MEAT. Not grilled meat

There are woods good for grilling but not so much for smoking.

Mesquite, EXCELLENT for grilling, HORRIBLE for smoking (too bitter of a smoke wit prolonged exposure)
OAK, EXCELLENT for grilling, ok for smoking (better flavor out there)
Pecan: pretty good for both, but I wouldn't consider it an elite smoking wood.

Yeah I don't use a grill for much more than burgers & dogs unless we're in a hurry for "quick food". We're OLD so the word hurry doesn't come up much around here.

You will learn to love pecan and oak on an 18hr smoke for brisket.....yummmm

I don't like mixing woods either. It totally makes the taste generic and you don't get the true uniqueness of the flavor.

Been smoking for a while....pecan and oak are good...just not great IMO.

Here is another thing. MY Opinion....I will take smoked PORK (ANY PORK) over brisket any day and twice on Sunday.

Just have never been a huge fan of Brisket...even though I have won some local BBQ Contests with it. Pulled Pork, Chicken (whole or leg quarters) and RIBS is where its at!!!!

I have been all over the United States when I worked on Nuke Plants. The best BBQ I've had that beets North Carolina(NC BBQ is really good) was in Sweet Water, Tennessee near Watt's Bar power station. I don't remember the name of it, But the place looked like it was gonna fall down. The old smoke shack out behind the place just smelled of heaven. Now that I left the Nuke's (to save my marriage) the best place I have now is Famous Dave's. I have to tell you it's darn close to Tennessee. Still miss that place, good people and good eats. Oh one more thing, do ever,,,ever trash talk the Voles. Boy they love their Voles.

Ok....you had me goin till you mentioned Famous Daves LOL Not a fan....too "McDonalds" Like for me.

My absolute Favorite place to ge eat BBQ (if not my own) ;) Sorry, no North Carolina resturants make it :p

The ORIGINAL Store (Across from Bass Pro Shop in Springfield MO) is by far the BEST! http://www.buckinghambbq.com/ They have a horseradish coleslaw that is absolutely the BEST I have EVER had. It will flat give your tatebuds the biggest BEATDOWN they have ever had! And you WILL ask for more again and again. Their "BBQ Parfait" is good enough to make you trade your kids for.

Here is another Great BBQ joint. It mixes Midwest BBQ with Southern BBQ for a supreme and unique taste. I use their rub which is one of the best "pre-made" rubs I have ever used.

Actually its not. BBQ got started in the South . The TRUE South (Texas isn't "southern" if'n ya know what I mean) Slaves (or former) invented the BBQ "pit" and the slow smoking process of cooking.
Texas for sure has its unique style in BBQ and I like it. However, I would like try a BBQ place thats woth a crap in the Dallas Area. So far I haven't found it :( Abilene has a wonderful BBQ joint. Even Sanger has a decent one. My Sister lives in Midlothian, so I am always on the hunt for a good BBQ place

I apologize for the ugly girls comment. And I do agree the local chain restaurants here in Dallas like ****ies is not very good . However our HOA is having the yearly BBQ cook off . Just our neighborhood and there will be about ten competitors. All fantastic, just saying , lots of people do this in Texas...

I see some votes for Tennessee in the thread but out of curiosity is the stuff in Eastern Tennessee pretty much the same as North Carolina and then it changes as you head west out of the mountains?
