Balancing/jack plate issue

Hey guys, so here is my issue.

I have a procraft 210 super pro with a 225 opti. 25 tempest that's been tweaked a little, 10 inch slidemaster. When I am with my partner, she cranks along about 71, turning right on 5800 rpm, great bow lift, grips the water great, feels like I'm riding on air.

Same boat, same load, nothing different except no partner, and then I have no bow lift, and I'm hitting 5800 rpm at barely over 3/4 throttle, and I can only get 60 mph. I have a lot of throttle left, but i don't push it because of the rpms. Any suggestions on getting the same performance when I am by myself? Seems like it should run better with just me, but it's not. Never had a boat do this before.

I tried moving heavier stuff to the back, and it helped a little, but I still can't get the lift I need and it just won't grab when I'm wide open. It gets squirrelly too. Idk if I need a different prop, need to move my plate up or down, or need to shift my load around more.

I'm quite perplexed on this one. Any help/suggestions are appreciated!
