I swear once you start making your own the store bought jack links or oberto just don't satisfy. My local meat department has started carrying extra thin sliced top round that is perfect for jerking. I use low sodium soy sauce, teryiaki marinade, onion powder and honey for the marinade and let it soak for 24hours. Then onto racks and in the oven overnight at 170 (prop the oven door open slightly to let moisture escape. Next morning its ready to eat
