New Bullet 21ss ( hydraulic or manual jackplate??)

Im looking into getting the new bullet 21ss and ask the dealer bout putting a hydraulic jackplate on it for me. He said in his opinion he wouldn't do it. It mite blow out if I went to high and I wouldn't be able to set it in the right spot everytime.
I have had a bullet 21xd for 18yrs. It had a 10in manual on it. I love the speed of a bullet and I fish alot of tournaments on Sam Rayburn where the water get very rough. So when the water was rough and I was fishing a tournament I would lower my motor. Seem like it handled it better and I could keep the nose up. On holidays I would raise it to play. I didn't have low water pickup so I never raised it high enough to worry bout blowing out.
All the other brands of new bass boats around here are putting hydraulic jackplates on them.
Do any of the hydraulic jackplates have a STOP on them where you can't go too high? What happens if you do go too high and blow out? Does it just scare the Crap out of you? Lol.
