Do ya do it yourself or have it processed. I do it myself with the exception of hamburger being made and I used to do that but just dont have the time anymore. I'll cut the steaks and roastes out then bone all the rest for burger.

I dont have a walk in cooler so I water age the meat in a cooler and ice bath for about 7 days. When the water turns bloody I drain it and add more. After day 7 I'll cut up for steaks/chops. The meat will look pale white until you cut it then its blood red inside.

I know a guy in New Mexico who quaters out his elk and put them in a ice bath for 7 days.........HIS HOT TUB!
