Get a grilling skillet or plate. Bed Bath and Beyond has a bunch of different types. I like to use my Weber Charcoal grille, but have made this on a gas, too. Bass, Farm Raised Catfish, Redfish, or whatever firm fleshed fish filet you like. Put Cajun seasoning on each side and rub it in with a little melted butter/olive oil mix. Grease the plate with Canola oil as it's more heat tolerant. When the grille is ready, put the plate on and let it get smoking hot. Drop the filets and cook about 3 minutes a side for a 6 ounce filet. If you like shrimp, add 'em.
